Father son team Carlos and Ronald Rodriguez operate Finca Las Pichingas an 8ha farm situated at 1,100 meters in the northern highlands of Comayagua, this lot brings together four varieties—Parainema, Obata, Anacafé 14, and Batian. The cherries are floated, pulped, and given a special 48-hour fermentation before being sun-dried on African beds for 15 days. With a post-harvest resting stage that enhances stability, this honey processed coffee offers a distinct taste of Comayagua’s unique climate and culture, celebrated each year at the local coffee festival.
