Our three Christmas coffees are all extended fermentation processed. Much like making wine uses this process with grapes, it is less common with coffee cherries. Fermentation occurs naturally with the sugars and water from the coffee cherry and enhanced with the extended process. This produces coffee with further depth and creative notes such as the Christmas notes picked out in our chosen beans such as Port, Wine & Marzipan.
